7 Dish Vegan Meal = Delicious Food Coma
Joshua Ploeg is a vegan chef who currently splits his time in Sacramento working for private clients and local shops, and touring the country planning private dinner parties. He went from touring in punk bands to showcasing his skills around the country as a traveling chef.
(Joshua from my last experience, 2004)
He was in Richmond last night as part of a book tour, and decided to host a dinner party to help cover the cost of going back home. I think a dish may have been missed, but here’s what we came up with as last night’s dinner menu (my photos were lacking):
Soup: Roasted Garbanzo Beans,Onions, Carrots, Garlic, Tumeric Broth, Black Lentils, Sweet Potatoes
Salad: Arugula, Romaine Hearts, Roasted Peanuts, Baby Roma Tomatoes, Avocado, Bananas in Lime-Ginger Dressing
Appetizer: Deep Fried Sunflower Butter Balls with Ginger Lemon Sauce + Curry Hot Sunflower Mustard
Appetizer: Mirage in Atar - (from his first cookbook, Something Delicious This Way Comes)
Side: Spiced Plum Tomatoes with greens, sweet potatoes, mushroom trio - Spices: Ginger, Cardamom
Main: Sauteed Eggplant, squash, baked tofu + peppers in Roasted Vegetable - Coconut Curry Sauce with Apricot Kernel Cous Cous
Dessert - Fruit Parfait - Honeydew Melon, Strawberry, Mango, Pineapple, Chocolate, Lemon Peel, Macadamia Nuts, Mint + Sweet “vegan” cream sauce
